Loving the burst a big breakfast gives to my day, I've been trying to make them more hearty and fulfilling.
These potato creation choices were buy one get one free at the grocery store, so I selected hash browns and diced potatoes with onions. For these, I used the hash browns. They were just grated, raw potatoes, so you could easily substitute the fresh stuff, which I plan on doing in the future!
I beat one egg with a sprinkling of water to thin it and added a handful of grated cheese blend with a little salt and pepper. I folded in about a cup of the grated potatoes and mixed until the egg covered everything.
I sprayed a skillet with Pam and plopped the mixture in, spreading it out along the bottom of the skillet until it was about 1/4" thick.
I turned the heat to about medium, medium-high and let it hang out for a few minutes with a lid on. Then, I flipped and let it cook another few minutes on the other side.
It turned out easily onto my plate and was a delicious, crunchy browned patty of cheesy potato and egg goodness!

ReplyDeleteOh yum, I will have to try this (sans cheese)! I used to hate eggs, but the organic ones somehow taste better :)
ReplyDeleteOooh, potato pancakes! I only have them when I bum them off my Jewish friends at Hannukah time, but now that I'm thinking about it they're a totally obvious breakfast food. Yum!
