Salsa Chicken

We love Mexican food. I'm not one for repeat flavors, but we could honestly eat Mexican food 2 or 3 times a week and not get sick of it.

I had the rest of the pack of thin sliced chicken breasts to use up, but it was too little to use a full pack of seasoning to make tacos, so onto plan B.

1/2 cup salsa
1/4 cup frozen corn
maybe 2/3 lbs. (?) of thin sliced breasts
salt and pepper to taste

Pour all into a skillet over medium heat and place the lid on. Cook for about 10 minutes, turning once or twice.

I went to the pantry for rice and found a box of Mexican Style Rice a Roni, so decided to cook that instead. Last, I opened up a can of black beans and heated them on the stovetop. We dressed everything up with the usual shredded cheese and sour cream. Mmm, mmm yummy!

  1. I'll make something similar to that Christina, but put everything in the crock pot.

    At the end of the day, the chicken is all shredded and you can serve them with tortillas, or serve it over rice.

    Your dinner looks awesome and super easy!

  2. Jennifer, the last 2 chicken dishes I tried in the crockpot turned out horrible! It was supposed to be pull-apart, but mine were all rubbery and tough. Maybe the third try's a charm??

  3. hmmm I"m not that huge a fan of mexican food, but I do love that recipe you posted up!!! My problem with things like burritos and taco's is that the shells are SO FREAKIn dry!!! THey get stuck in my throat and i have to drink TONNES of liquids to wash it down. Grrrr. What's your favorite restaurant in chciago to go to???

  4. Michelle - you can cook plenty of Mexican inspired dishes without burritos or tacos! We also love putting the usual taco fixin's over rice, like a big taco bowl. Or even over a salad!

    Well, we're about 25 miles south of the city, so we haven't frequented many Chicago restaurants. We're usually there for an event, or to see a museum, etc. so a lot of times we'll eat there. I've also eaten at Navy Pier (mmm hot dogs), Gibsons, a few in Chinatown and a fancy dinner at Spiaggia.

    Of those, I'd have to pick Spiaggia b/c it was one of those really well prepared meals where everything is delicious (even mushrooms!). I wasn't impressed by Gibsons at ALL, as much as they're hyped up. Our waiter was crap, it's pricey as hell, and a fellow diner had to send their steak back TWICE to be cooked more b/c it was practically still bleeding. Chinatown (in any city) is always wonderful!

  6. Ahhhhh....Mexican food. My favorite. Hubby is Mexican, I'm Irish, and I don't particularly like to cook. But the one thing I have mastered is homemade Spanish Rice. It took years, partially due to my lack of cooking skills and partially because my Mother-In-Law's "recipe" consisted of, "a little of this, a little of that, cook for a while, etc....". Once conquered though, it's super easy and you'll never use the boxed variety again. This type of dish is my favorite because it's simple, creative and delicious. Everything tastes good with cheese and sour cream.
